Eileen Horsnell was one of the very first chefs to support Hand Sourced back in 2013, championing our #SommerladHeritageChicken. Fast forward to January 25, and here’s your chance to experience her magic again—this time with her long-time chef friend Daniel Lusi.

Join Eileen and Daniel for an unforgettable food and wine experience under the summer sun at Boomtown Wine, Castlemaine. Expect 5(ish) courses crafted from the incredible local produce of the Castlemaine region, perfectly paired with wine from the talented Boomtown crew.

Ever wondered what life is like on a biodynamic sheep farm? Vince Heffernan from Moorlands Lamb shares regular updates from his certified biodynamic farm, where holistic grazing is key. This approach optimises grass growth, builds soil structure, and protects perennial grasses, creating a thriving environment for his animals. 🐑

Moorlands is fully Demeter-certified, and all lambs are born and live their entire lives on the farm. They graze on a smorgasbord of natural grass varieties, with no artificial inputs—no GM feed, fungicides, insecticides, chemical fertilisers, or pesticides. This commitment to bio-dynamic principles ensures healthy, living soil and produces some of the finest lamb, hogget, and mutton in Australia.

Chicken Liver Parfait with a dressing made from chopped mizuna and hazelnuts served alongside toast.

The parfait is made using livers from Sommerlad Chickens, brought to us by @grasslandpoultry in Wellington, NSW via @handsourced. These heritage chickens are all pasture raised on regenerative farms and are there for all of their lives - this means they are bred and then allowed to roam and forage on what the farm has to offer - leafy greens, grass, insects and other microorganisms found in the soil. They are then processed on the farm, sparing the stress of the birds from travel and with no introductions to chemicals. These chickens are truly the star of the show and it’s so wonderful to be able to use a product that is deeply rooted in my ethos of cooking with sustainable, ethically raised and sourced food.

The livers are so clean in flavour - it should go with a garnish that highlights both the livers as well as season (spring) - so I used mizuna, a peppery leaf belonging to the brassica family, dressed with cold press hazelnut oil, salt and chardonnay vinegar.”
