This week, we want to share a little about our chickens and where they’re grown. Finding poultry that is truly healthy and regenerative isn’t always easy—but that’s exactly what we’re committed to.

Australia’s best chicken starts with the best genetics and is slow-grown on Meramie—1,500 hectares of Box Gum grassy woodland, an environment naturally suited to poultry that love to roam, exercise, and forage.

What makes this even more special? Every chicken is bred, hatched, raised, and processed on-farm—a rare practice in pasture-raised meat bird operations. This results in healthier birds, stronger bones, robust organs, and, ultimately, award-winning flavour.

Healthy, happy birds don’t need antibiotics or chemicals—just time, space, and care. Thank you, Grassland Poultry, for everything you do to produce truly ethical, regenerative poultry.

Back in 2017, I shared this image that the wonderful Chris Hagan photographed and posted on his social media channel. I received a number of emailed complaints, saying ‘you can’t show that!’ The image was confronting to some.

But food that was once a life should be confronting. Every animal that becomes part of our meal has given up its life, and acknowledging that is essential. Feeling a moment of discomfort when looking at a whole carcass means you are still connected to the life cycle you participate in when you choose to consume meat or poultry.

If you feel squeamish, that’s not a bad thing—it means you recognise the reality behind the food on your plate. And that’s important. Meat should be more than just a neatly packaged product in a supermarket aisle. It should be understood, respected, and sourced with care.

At Hand Sourced, we work with chefs who appreciate the farmers who raise their animals ethically, ensuring their lives—and their role in our food system—are never taken for granted.

Some people read our website and think our products are 'too pricey'—and they’re not entirely wrong. Our produce isn’t cheap, and here’s why:

• Mass-produced meat may cost less, but it comes at a different kind of price. Quality, taste, and transparency matter, and we ensure that every product meets the highest standards.

Other websites may claim to be farm direct, but think about it—if you receive a farm direct product within days of ordering, that animal couldn’t possibly have still been out on the paddock when you placed your order. Most of our animals are raised to order, living their best lives right up until the time they are selected. The farm-to-table process takes time, and that’s what makes the difference. Exceptional quality is always worth the wait.

Yes, you might pay a little more, but you’re investing in real food—food that supports small farms, respects the land, and delivers unmatched flavour and nutritional value.
